Meatless Monday: End-of-Summer Tomato and Basil Bruschetta Recipe

I'm savoring the end of summer with a sabroso, tomato and basil bruschetta.

An Italian appetizer, bruchetta is toast flavored with garlic and olive oil. This recipe featuring a fresh tomato topping is a perfect vegan app or light Meatless Monday lunch.


Tomato and Basil Bruschetta Recipe


  • 4 ripe medium tomatoes, diced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped
  • salt and pepper to taste
  • 1 baguette French bread
  • 1/4 cup olive oil
  • 2 cloves garlic, peeled and cut in half


  1. Make the topping. Mix tomatoes, 1 Tbsp extra virgin olive oil, and vinegar in a bowl. Add the chopped basil followed by salt and pepper. Set aside.
  2. Slice the baguette into 1/2 inch thick slices. Toast the bread on a griddle for 1 minute on each side.
  3. Pinch a piece of garlic and rub the exposed inside of the clove over each slice of bread, squeezing the garlic between your fingers to release its juices into the bread.
  4. Drizzle olive oil on each slice of bread with a spoon or paint oil on with a pastry brush.
  5. Spoon some topping on each slice of bread and serve.


I love the sabor and texture of this easy vegetarian dish. Flavorful basil and balsamic vinegar complement sweet tomatoes, and the soft veggie mix is a perfect topping on crunchy toast.

This recipe is as healthy as it is delicioso: tomatoes are rich in nutrients and antioxidants while basil can reduce anxiety. With no cream or cheese to add excess fat and calories, you can linger over this smart snack with zero guilt!
