Cutting out meat from your diet doesn’t mean giving up the grill!
This Memorial Day Meatless Monday, make sabroso grilled vegetables the central dish at your BBQ.
My hubby is the grill master in our casa. He shares his tips for perfect grilled eggplant, asparagus, squash, zucchini, peppers, and tomatoes:
Roberto’s Grilled Vegetable Tips
- Prepare your grill at least 30 minutes before cooking. When using a charcoal grill, arrange coals in a mound in the center of the grill and light. Let coals heat for 20-30 minutes until they begin to turn ash gray. Add mesquite and wood chips for enhanced smoked flavors. Place the grill over coals and as soon as it gets hot, clean by rubbing it down with a 1/2 onion or orange.
- Place vegetables directly on the grill for 3-5 minutes, until lines form.
- Transfer veggies from the BBQ to an aluminum foil pocket and drizzle with olive oil. Add salt, pepper, garlic, or fresh herbs to taste.
- Set aluminum foil pocket on a cooler part of the grill, along the side. Cook 5-10 minutes until vegetables reach your desired texture.
- Serve and enjoy.
Enjoy grilled veggies on their own, in a bun, or fajita-style in a tortilla.
Follow the same steps for grilling fruit like pineapple or pears for dessert. For corn, peel back the husks to remove the silk, rub in butter and seasonings, then replace the husk and place directly on the BBQ for about 15 minutes.
On Memorial Day, we put aside politics and celebrate our soldiers--our neighbors, amigos, and familia--who have died in the U.S. Armed Forces, many who are Latinos and have served in the U.S. military since the Revolutionary War. Today, 11.4 percent of active-duty military forces are Hispanic.
Gather familia and friends to celebrate with a veggie cookout on this holiday or any summer day. When grilled vegetables are so fácil, sabroso, and healthy, you won't miss the carne.
